Thai Chicken Soup
from The 7-Day Diet Plan and Cookbook by Meredith Cochran
Gluten free * Dairy Free * Paleo

Makes 8 servings  This recipe is a spinoff of the classic chicken noodle soup.  By infusing Thai flavors, you can incorporate different seasonings into your weekly routine,.

PREP TIME: 5 minutes
COOK TIME:  30 minutes

2 onions diced
2 tablespoons coconut oil
1 tsp paprika
1 teaspoon turmeric
1 teaspoon salt
40 ounces Chicken Bone Broth
2 (13.5 ounce) cans full-fat coconut milk
1 tablespoon fish sauce
¼ teaspoon chopped ginger
(Dr. Lindy’s additions)
Juice of one lime
Chopped cilantro

In a Dutch oven over medium heat, saute’ the onions in the oil for 5 minutes stirring
frequently.

Add the paprika, turmeric, and salt.
Mix well

Add the broth, coconut milk, fish sauce, and ginger, and bring to a gentle boil.  
Reduce the heat to low and simmer for 30 minutes.

Remove the pan from the heat and let cool slightly.  
Puree the soup until smooth.

Lastly add lime juice.
Top with chopped cilantroType your paragraph here.



Elderberry Syrup by Wise Woman Herbals - This very concentrated high quality elderberry syrup also has echinacea, vitamin C, zinc and osha for broad spectrum immune support.  Dosage is 1/4 tsp 1-3 times/day.

Vitamin C has several beneficial purposes including providing support to the body's immune system. At the first sign of a cold or flu mix some of this powder in juice or homemade lemonade and sip throughout the day.  The dose to start with is 100 mg/pound. For example, a 20 pound child can take about 2000 mg/day (~ ½ tsp.) Vitamin C is non-toxic so you really can’t take too much. However, it will cause diarrhea if the dose is too high so if this happens just give less.

Recipe:  Homemade Lemonade (or limeade)  For each quart of water add ¼ cup fresh squeezed lemon or lime juice plus ⅛  cup grade B maple syrup (or your favorite sweetener). To this you can add the Sodium Ascorbate powder for a big boost of vitamin C.

Homeopathic Remedies
We have included four common homeopathic medicines used to treat influenza and common winter illness.  Look at the descriptions below and find a medicine that matches your symptoms (or your child’s) most closely.  You may take 3-5 pellets every hour or two. If you take 3-4 doses of the medicine and have no change or relief of symptoms, it is likely not the right remedy.  The medicines do not necessarily make the flu disappear but will help the patient feel more comfortable. Aconitum 30C - This is often the first remedy given if there is anxiety that comes on suddenly and with great intensity. A sudden high fever, the first states of a cold from getting chilled. Restless, burning pains, palpitations, faintness.  Laryngitis, sore throat, croupy cough. One or both cheeks red. Intense burning thirst for cold drinks.
Belladonna 30C - Influenza with rapid onset and high fever.  Hot head and cold extremities. Face flushed and red, eyes glistening.  Hands and feet are cold but the person feels very hot. Thirstless. Delirium. 
Bryonia 30C - Indicated for slowly progressing influenza with body aches and worse from the slightest motion.   Dry mouth and very thirsty. Headache with flu. Wants the windows open.
Gelsemium 30C - This is for influenza with marked weakness and sleepiness.  Often a slow onset of fever. Chills running up and down the back.  Thirst is minimal. Weakness and heaviness of the limbs, eyelids, and head.  Eyelids droopy or half shut.

With the cold weather here, we would like to share with you some tips to keep you and your family healthy for the winter.  First of all, it’s good to remember that getting an occasional illness keeps our immune systems strong and vital. For our children, it is especially important that their immune systems are exposed to viral illnesses never encountered before so that they can grow into healthy adults.  For those of you who would like to better understand how our immune system works, pick up a copy of Vaccines, Autoimmunity, and the Changing Nature of Childhood Illness by Dr. Thomas Cowan, MD, a San Francisco physician and long-time friend of Pediatric Alternatives.

From October to March we don’t get enough UVB rays to make any Vitamin D.  Please talk to your doctor regarding the dosages for your family.
